Still going strong on the salad front, and nothing is more refreshing than a vegetable that is 99% water. My parents used to make a recipe similar to this growing up, so its a pretty nostalgic cookout side for me! 

Cucumber Dill Salad:
2 tbsp Red Wine Vinegar
1 tbsp fresh Dill
1 tbsp EVOO
1/2 tsp salt
1/2 tsp pepper
1/4 Red Onion chopped
1 English Cucumber

Wisk liquids together and add seasonings. Toss in cucumber and onion. You can serve immediately but it is so much better when left to marinate over night. Trust me ;)
