TASTY TUESDAY

Working third shift is a bummer- but a silver lining is when you and your co-workers make it a potluck smorgasbord! I decided to stay healthy and made this delicious Cilantro Lime Chickpea Salad. I found this recipe a few years ago on Tastespotting and it was the perfect recipe to try out my new food processor! Here is how to make your own ...

Ingredients:
2 cans Chickpeas, drained and rinsed
4 loosely packed cups of spinach
1/2 onion, finely chopped
4 limes (juiced)
1 loosely packed cup of cilantro
3 tbsp sugar (I used Stevia)
2 tbsp dijon mustard
2 cloves garlic finely minced
1/2 tbsp chili powder
1/2 cup olive oil
Begin by chopping your spinach, either by hand or in your food processor. In a large bowl combine the chickpeas, onion and chopped spinach and set aside.

In your food processor combine the lime juice, cilantro, sugar, mustard, garlic, chili powder and olive oil. Process for 30-40 seconds until it becomes a creamy dressing. Pour over contents of your bowl and mix.

I personally like letting this salad chill for a few hours in the fridge to let the flavors mesh! It is still tasty if you decide to nosh immediately ;)
